J. R.'S "TRAPPER JOHN" CHILI

This recipe was designed as a basic place to start for competition- type chili.
In a saucepan, mix together and simmer: 1 can chicken broth 2 cans El Pato sauce 1 (14 oz.) Ortega green chilies 1 can Jalapenos, gutted & diced 1 can Budwieser beer 2 (3 oz.) bottles Gabeharts chili powder 4 tbsp. cumin seeds, ground 1 1/2 tbsp. Mexican oregano, leaf type, ground 10 cloves garlic, chopped fine and mashed 3/4 tsp. red pepper 3 tbsp. New Mexico red chili powder 8 coriander seeds, ground fine 2 pinches of ground mustard seed 6 green onions, including greens chopped fine
In a heavy pot, preferable iron, brown: 6 to 8 lbs. lean red meat, cut into sm. uniform chunks 3 to 4 lg. onions, chopped to med. fine
When meat is brown, add contents of saucepan. Simmer for 3 hours, stirring often. If thickening is required, use flour. If thinning is required, use beer.
