    1 TBS olive oil
    3 cloves garlic
    1 large onion
    1 large green bell pepper
    1 habanero pepper or other hot pepper
    1 package tempeh or ground soy burger(optional)
    16 oz. can corn (shoepeg is best)
    3 15 oz. cans beans (black, northern, and pinto are best)
    14.5 oz. can stewed tomatoes
    16 oz. can tomato sauce
    2 large or 3 small cans V-8 or other vegetable juice
    Cumin, pepper, salt, Tabasco

    Mince the garlic and hot pepper (make sure the hot pepper is minced into
    very small pieces), chop the green pepper and onion, and saute in the
    olive oil for a few minutes. Next, add the tempeh (crumbled into small
    pieces) and saute for another 5-7 minutes (you may need to add a little
    more oil). Stir together the tomato ingredients (including V-8), and add
    to it the sauteed mixture. Let simmer about 5 minutes. Add beans and
    corn. Season with cumin, pepper, salt, and Tabasco to taste. Let simmer
    another 5-10 minutes. Serves 6-8 people.
