    List of Ingredients




    1 cup dried green or brown lentils 250ml

    19oz can chickpeas 540ml

    2 tbsp chili powder 25ml

    1 tsp dried oregano 5ml

    1/2 tsp dried basil 2ml

    1/8 tsp pepper 0.5ml

    1/2 cup plain low fat yogurt, optional 125ml

    2 cups tomato juice 500ml

    2 cups vegetable stock 500ml

    3 PEI potatoes, diced 3

    1 medium onion, chopped 1

    2 small carrots, chopped 2

    1 celery stalk, chopped 1

    1 green or red pepper, chopped 1

    2 garlic cloves, crushed 2

    14 oz can kidney beans 398ml

    19 oz can chopped tomatoes 540ml

    Recipe



    Wash lentils. Drain and rinse chickpeas. Combine all ingredients, except yogurt, in a heavy saucepan, cover and bring to a boil, reduce heat and simmer about 30 minutes, stirring occasionally, until lentils are tender. Dish into serving bowls and garnish with a dollop of yogurt, if desired.
