    List of Ingredients




    1 to 11/2 lbs boneless, skinless chicken breasts
    4 T. olive oil
    1/2 to 1 whole onion, finely chopped
    3 cloves garlic, minced
    1 red bell pepper, diced
    1 yellow bell pepper, diced
    1 T. chili powder
    1 tsp. ground cumin
    1 tsp dried oregano
    5 cups chicken broth
    2 (15-oz.) cans cannellini beans or black beans
    1 (4-oz.) can diced green chilies
    salt and pepper to taste
    1/4 tsp hot pepper sauce (or more to taste)
    Rice
    Sour Cream
    Shredded Cheese

    Boil chicken until completely cooked and then chop into small pieces. Drain and reserve the broth. Heat olive oil in a large stock pot then add onion, garlic, red and yellow peppers and chicken. Saute until vegetables begin to soften. Add chili powder, cumin and oregano to the pot, mix and cook 3 minutes. Add chicken broth, beans and green chilies and continue to cook on medium for 5-10 minutes, stirring occasionally. Serve with rice and a dollop of sour cream and a sprinkle of cheese
