    Cajun Shrimp Kabobs


    # Two pounds of U10 Raw Shrimp
    # Two Tablespoons of Cajun Seasoning (store bought pre made mixture will work fine)
    # Three Tablespoons of Olive Oil
    # Twenty Nine Inch Skewers

    Mix all ingredients and marinate over night. You have two choices with the next step you can saut� and skewer or skewer the raw shrimp and grill. Also, this hors d'oeuvre may be served hot or chilled whatever way you prefer.

    Caramelize Red Onion Dip

    Ingredients
    # Two Whole Large peeled Red Onions Julienne
    # One Tablespoon of Olive Oil
    # Two Cloves of Fresh Garlic Minced
    # Half Cup Sherry Wine

    Procedure

    Saut� red onions at a medium heat for one hour stirring every 8 to 10 minutes to caramelize evenly. After this process add the garlic and cook for one minute; add sherry wine and reduce until dry. Transfer to a bowl and cool mixture down in refrigerator.

    Ingredients
    # Caramelized Red Onion Mixture
    # One Cup of Mayonnaise
    # Two Cups of Sour Cream
    # Dash of Worchester Sauce
    # Dash of Tabasco Sauce
    # One Lime, Juiced
    # Salt and Pepper to taste

    Procedure

    Add all ingredients to a food processor and puree. Salt and pepper to taste.
