    � whole live lobster
    2 oz. 51- 60 shrimp, peeled and de-veined
    2 oz. bay scallops
    2 oz. calamari
    2 oz. manila clams
    2 oz. black mussels
    6 oz. risotto
    2 oz. chopped onion
    2 oz. chopped shallots
    2 oz. chopped garlic
    3 anchovies filets
    1 oz. tomato sauce
    20 oz. chicken stock
    � c. white wine
    saffron
    olive oil
    salt and pepper

    Recipe



    Saut� garlic, onion, shallots in 1 tbsp. olive oil and add 10 oz. chicken stock. Bring to boil add risotto and white wine partially cook. Add 1 tbsp. olive oil to sauce pan over med heat. Saut� lobster, shrimp, scallops, calamari, clams, anchovies and mussels add chopped garlic. Add partially cooked risotto to sauce pan with seafood add tomato sauce, 10oz. chicken stock and 1 pinch of saffron. Salt and pepper to taste. Place in oven at 450 degrees for 5 minutes.
