    8 oz fresh halibut
    1 oz chopped green onion
    1 tsp minced garlic
    8 oz stewed tomatoes, blended
    4 oz clam juice or fish stock
    1/4 cup white wine
    1 T chopped parsley
    salt and pepper

    Recipe



    Heat olive oil until very hot. Saute onion and garlic until semi-golden. Add halibut. Cook each side for one minute. Add white wine, tomato, clam juice, parsley and salt and pepper to taste. Cover skillet and simmer for 15 minutes. Baste fish with sauce about half way through. When tender, place fish on a plate and top with remaining sauce.
