    List of Ingredients




    �4 filets of Snapper
    �6 tbls. of butter
    �2 tsp. shallots
    �2 tsp. chopped garlic
    �2 tsp. chopped onion
    �1 cup white wine
    �6 tbls. dry vermouth
    �4 oz. sliced mushrooms
    �2 tbls. red pimentos
    �4 artichoke hearts, quartered on top
    �salt & pepper to taste

    Recipe



    Melt 4 tbls. butter in a large skillet. Add the snapper filets and saute til done to your likeness. In a separate saucepan combine the rest of the butter, shallots, garlic, onion, white wine, vermouth, mushrooms, pimentos and artichoke hearts and cook over medium heat until soft and translucent, about 5 minuets. Reduce heat and cook 5 minutes. Arrange sauteed snapper filets on plates, spoon sauce on top and serve.
