Rocco's Grandmother's Amaretti

10 ounces whole almonds
1 1/3 cups sugar
1/4 cup white flour
2 - 3 egg whites
1/2 cup powdered sugar
Recipe
Heat oven to 200 degrees.
Bring a pot of water to a boil.
Scald the almonds in the boiling water and peel them. Dry in the oven on a low temperature.
Chop the almonds, adding a little sugar.
Mix the almonds, the remaining sugar, the flour and add the egg whites a little bit at a time.
Place a sheet of aluminum foil on a cookie sheet.
Place little heaps of the mixture on the foil.
Sprinkle with powdered sugar and set aside for 2 hours.
Heat the oven to 250 degrees.
Bake in the oven for 40 minutes and serve.
Yield: 30 to 40 amaretti
