    This recipe came from a restaurant called Bennett's Lunch in downtown Winston-Salem. It has now closed, but are said to have been very famous for their sandwiches.

    List of Ingredients




    1 2-pound London broil
    Salt and pepper to taste
    2 tablespoons all-purpose flour
    Hamburger or other buns

    Recipe



    1. Cut London broil into pieces that will easily fit into a pot. Add water to cover and bring to a boil. Season with a little salt and pepper, reduce heat and simmer for a couple of hours, or until the meat is tender enough to shred with a fork.

    2. Strain out the meat, reserving the broth. Cool the meat in the refrigerator.

    3. Cut cooled meat into small pieces, about 1/2 inch square. Place flour in a large frying pan and brown over high heat, stirring often and watching carefully that flour doesn't burn.

    4. Very slowly add a cup of the reserved broth to the browned flour, stirring constantly. Adding the broth too fast may cause splattering. Bring gravy to a simmer, then stir in chopped meat. Add more broth as necessary to keep meat from drying out. Simmer 30 minutes or longer over low or medium-low heat, stirring occasionally, until the gravy has cooked down to the point where it just coats and moistens the meat. Taste for salt and pepper and add more if necessary.

    5. Split buns and portion meat into buns. Add such toppings as slaw, tomato, cheese, onions, mustard or mayonnaise as desired.
