    1 tablespoon olive oil
    1 pound boneless, skinless chicken breasts or thigh cutlets
    1 jar (28 ounces) spaghetti sauce (with mushrooms, tomatoes and/or peppers if desired)
    1 cup shredded mozzarella cheese
    4 slices Italian bread, about 3/4- to 1-inch thick

    Preheat toaster oven or oven to 350 degrees (to toast bread slices).

    Heat oil in a large skillet with a lid over medium-high heat. Add chicken and cook until browned, about 3 minutes per side. Reduce heat to medium, pour spaghetti sauce over chicken, cover and cook until chicken is cooked through, about 20 minutes. Remove lid, sprinkle cheese over each chicken piece, and replace lid for 1 to 2 minutes, or until cheese melts.

    While cheese melts, place bread slices directly on rack in toaster oven or oven and toast for 1 to 2 minutes, turning once.

    To serve, place a bread slice on a plate, top with chicken piece and cover with sauce.

    Makes 4 servings.
