    1 large bunch broccoli

    Salted water

    2 tablespoons butter

    1 tablespoon finely chopped shallots or scallions, including green part

    1 clove garlic, finely minced

    1 1/2 tablespoons flour

    1 cup fresh or canned chicken broth

    4 anchovies, finely chopped

    1/2 cup sliced ripe olives, preferably imported

    Freshly ground black pepper to taste

    2 cups of shredded Mozzarella cheese or sharp Cheddar cheese

    Cook the broccoli in salted water until tender. As the vegetables cook, melt the butter in a saucepan and add the shallots and garlic. Cook, stirring about 3 minutes. Do not brown. Sprinkle with flour and add the broth. Stir vigorously with a wire whisk. When the mixture is thickened, simmer 5 minutes. Add the anchovies, olives, pepper and cheese and stir until cheese melts. Drain the broccoli, and pour the sauce over. Serves 4 - 6.
