    Hungry Jack

    List of Ingredients





    Ingredients:
    2 cups Hungry Jack� Mashed Potato Flakes
    2 cups water
    3/4 cup milk
    4 tablespoons butter or margarine
    1/2 teaspoon salt
    1/2 medium red bell pepper, finely chopped
    6 green onions, thinly sliced
    1/2 cup chopped fresh cilantro
    1 egg, slightly beaten
    3/4 cup shredded Monterey jack cheese

    Recipe



    1. Heat oven to 350�F. Grease 9-inch glass pie pan. Prepare potatoes as directed on package using water, milk, 3 tablespoons of the butter and salt.
    2. Meanwhile, melt remaining 1 tablespoon butter in medium skillet over medium heat. Add bell pepper, onions and cilantro; cook 3 minutes or until tender, stirring occasionally.
    3. Add vegetable mixture to potatoes. Stir in egg and 1/2 cup of the cheese. Spoon into greased pan; spread evenly. Sprinkle with remaining 1/4 cup cheese.
    4. Bake at 350�F. for 18 to 25 minutes or until potatoes are thoroughly heated and edges begin to look dry.

    Serving size:
    4 (1/2-cup) servings
