Chilled Shrimp with Tomato Dressing

List of Ingredients
3 Tbsp extra-virgin olive oil
1 Tbsp each red-wine vinegar and creamy mustard spread
1 large ripe tomato, cored and diced
1 Kirby (pickling) cucumber, diced
2 Tbsp each diced red onion and chopped fresh basil or parsley
1/4 tsp each salt and pepper
8 leaves Boston or Bibb lettuce
1 lb large peeled, cooked shrimp
1 avocado, peeled, pitted and cut in chunks
Recipe
1. Whisk olive oil, vinegar and mustard spread in a medium bowl until blended. Add remaining Dressing ingredients and toss to mix and coat.
2. Arrange 2 lettuce leaves on each plate. Top with shrimp and avocado, then spoon on the Dressing.
