    Foil-Baked Fish with Vegetables

    List of Ingredients




    8 mahi-mahi steaks (1/2 lb. each)
    1 small eggplant, julienned
    2 red bell peppers, julienned
    1/2 cup marinated artichoke hearts
    1 1/2 Tbs. chopped fresh oregano leaves
    1/3 cup olive oil
    1 Tbs. balsamic vinegar
    salt and pepper

    Recipe



    Preheat oven to 400F.

    Cut eight rectangles of tin foil large enough to accommodate fish steaks when folded in half.

    Rinse fish and pat dry.

    Smear half of each piece of tin foil with olive oil.

    Combine eggplant, peppers, artichoke hearts and oregano with remaining oil and vinegar.

    Place 1/8 of vegetable mixture on top of each steak. Season with salt and pepper.

    Seal foil packets and bake for 12 minutes or until done.

    Place foil packets on individual plates and cut open.
    These can be prepared the night or morning before. Refrigerate until 30 minutes before cooking.
