    Soy Burgers with Japanese Flavors

    - - SOY BURGERS
    1 - lb. (480g) soysage (ground soy meat)
    5 - green onions, green parts only, thinly sliced
    1/4 cup (2 oz/60g) shiro miso (white soybean paste)
    1/3 cup (1 oz/30g) fresh breadcrumbs
    2 teaspoons mirin (Japanese seasoning wine)
    1 pinch ground ginger
    - - Freshly ground black pepper
    - - No-stick cooking spray
    4 - oat-bran English muffins, split and lightly toasted
    2 - handsful mixed Asian salad greens or mesclun
    - - Sliced red radishes or daikon radish
    - - WASABI MAYONNAISE
    6 tablespoons low-fat mayonnaise
    2 teaspoon wasabi powder or paste

    Recipe



    1 Combine soysage, green onions, miso, crumbs, mirin, ginger and a generous grinding of black pepper in a bowl. Form into four 1-inch-thick (2.5cm-thick) patties.
    2 Coat a large nonstick skillet with cooking spray and place over medium-high heat. When the skillet is hot, cook the patties for five minutes on each side, or until firm and opaque.
    3 Meanwhile, make wasabi mayonnaise. In a small bowl, combine mayonnaise, wasabi and vinegar.
    4 Prepare sandwiches on English muffins with burgers, wasabi mayonnaise, salad greens and radish slices.
