    4 slices wholemeal or multigrain bread
    1/3 cup smooth ricotta
    100g smoked salmon slices
    black pepper
    thinly sliced red onion
    snowpea sprouts
    2 wedges lemon

    Recipe



    Spread the slices of bread with the smooth ricotta. Top two of the slices with smoked salmon and grind over black pepper.

    Finish with the onion, some snow pea sprouts and the 2 remaining slices of bread. Slice sandwiches in half and wrap in plastic wrap or greaseproof paper. Individually wrap up the lemon wedges to squeeze over the salmon just before eating.
