    Shrimp Quesadillas Grande

    List of Ingredients


    • 1 tbsp. vegetable oil
    • 1 lb. jumbo or extra-large fresh shrimp, shelled, deveined and coarsely chopped
    • 1 jar (14 oz.) Pace Mexican Creations Cilantro & Lime cooking sauce
    • 4 flour tortillas (10")
    • 2 cups shredded Mexican blend cheese
    • 1/2 cup drained canned black beans


    Instructions


    1. In 10" skillet over medium-high heat, heat oil. Add shrimp. Cook and stir 2 min. or until shrimp are pink. Add 1 cup cilantro & lime cooking sauce and heat through.
    2. For each quesadilla, spread half of shrimp mixture on 1 tortilla. Top with half of cheese and half of beans. Top with another tortilla. Moisten edge with water and press edge to seal.
    3. Over medium-high heat, heat 12" nonstick skillet. Grill each quesadilla until browned on both sides and cheese is melted, about 4 min. Cut into wedges and serve with remaining sauce.

    Makes 2 quesadillas.
