List of Ingredients
- 1/3 cup mayonnaise or salad dressing
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 hard-cooked eggs, chopped
- 1 medium stalk celery, chopped (1/2 cup)
- 2 medium green onions, sliced (1/4 cup)
- 8 slices whole-grain bread
- 1 medium tomato, sliced, if desired
- Lettuce leaves, if desired
Instructions
- Mix all ingredients except bread, tomato and lettuce.
- Spread egg mixture on each of 4 slices bread. Top with tomato, lettuce and remaining bread.

4 sandwiches.
