Creamy Rice Pudding

1 1/4 cup milk
1 heaping cup rice
1 cup sugar
2 eggs
1 large can evaporated milk
1 tsp. vanilla
Raisins optional
Recipe
In large saucepan, bring 1 quart water to boil. Add rice and cook 12-15 minutes. Drain
Add milk and sugar. Cook over low heat 45 minutes, stirring often.
Wisk eggs, add evaporated milk and vanilla.
Add egg mixture to rice slowly, stirring constantly. On low heat cook additional 10 minutes or until thickened. Mixture will thicken more as it cools.
For Raisins. Plump 1 cup in hot water, Drain. Add to rice 15 minutes before end of first 45 minutes cooking time.
Sprinkle pudding with cinnamon
