Seafood Bisque
Thisi is a recipe from a local B&B ....it is simply delicious!! It is very rich though, but well worth the calories!!!
List of Ingredients
- 1/2 pound butter
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 stalks celery, chopped
- 1 1/2 cup flour
- 1 Tbl. minced garlic
- 2 quarts seafood stock
- 1 quart heavy whipping cream
- 1/2 Tbl. chopped basil
- 2 tsp. chpped oregano
- 1/2 tbl. paprika
- 1/2 tbl. cayenne pepper
- 1 tbl. fresh thyme
- 1 Tbl. sugar
- 1 1/2 lbs. shrimp (peeled)
- 1 1/2 lbs. peeled crawfish
- 1 lb. crabmeat
- 1 cup oysters
- 1/4 cup diced tomato, deseeded
- 1 Tbl. parsely
- 2 Tbl. green onion
Instructions
- Melt butter and add trinity (onion, bell pepper, & celery)
- Once trinity is cooked, gradually stir in flour on low heat for 8 - 10 minutes.
- Add garlic to the blonde roux and cook for another 10 minutes.
- Add seafood stock and whisk until mixed. Pour in cream and raise heat.
- Add basil, oregano, paprika, cayenne, thyme & sugar. Simmer for about 30 minutes.
- Stir in seafood and simmer for about another 30 minutes or until shrimp are completely cooked through.
- Add tomato, parsely, & green onion,. Serve with crusty french bread on the side!
