Calabacitas (Mexican Vegetables)

List of Ingredients
- 4 med. Zucchini or Yellow Squash, sliced (or 2 each)
- 1 large Onion, chopped
- 1/4 tsp. Garlic Salt (or 2 cloves Garlic, minced)
- 4 oz. Can Chopped Green Chili
- 1 c. Grated Cheddar Cheese
- 3 tbs. Vegetable Oil
- 16 oz. Can Whole Kernel Corn
Instructions
- Saute squash and onion in oil until barely tender.
- Add garlic salt (or minced fresh garlic), chilis, corn and cheese. Mix well.
- Put in buttered 1-qt. casserole and bake at 400 degrees for 20 minutes.
