    • 1 orange
    • 125mls fresh orange juice
    • 125mls dry sherry
    • 85g pitted prunes
    • 2tbs blanched almonds
    • 1tsp ground cinnamon
    • 600g chicken thigh fillets, trimmed
    • salt and ground black pepper
    • 1tbs chopped fresh parsley
    • Couscous (to serve), prepared following directions


    Instructions


    1. Peel the rind from the orange using a vegetable peeler.Remove any white pith from the rind and then cut the rind into long thin strips.
    2. Combine orange rind, orange juice, sherry, prunes, almonds and cinnamon in a large saucepan. Bring to the boil, rduce heat to medium and boil for 5-8 minutes or until reduced by 1/3.
    3. Add the chicken thigh fillets and simmer over low heat for 10 minutes or until chicken is just tender. Season to taste with salt and pepper.
    4. Serve sprinkled with the parsley and accompanied by couscous.
