    Blue Cheese Chicken Rolls

    List of Ingredients


    • 1 cup crumbled blue cheese
    • 2 Tbsp bread crumbs
    • 2 Tbsp nonfat sour cream
    • 1 pkg. (10 ozs.)frozen chopped kale,thawed and drained
    • 1 Tbsp canola oil


    Instructions


    1. In a small bowl,combine blue cheese,bread crumbs,and sour cream. Mix well.
    2. Prepare kale according to package directions. Set aside and keep warm.
    3. While kale is cooking,prepare chicken rolls. Spread cheese mixture evenly over each cutlet. Starting with a short end,tightly roll up cutlets jelly-roll style. Secure each rolled cutlet with a toothpick.
    4. In a large skillet,heat oil over med. heat. Add chicken rolls;cook,turning frequently,until no longer pink,about 10 min. Spoon kale onto a large serving platter,arrange chicken rolls on top. Serve immediately.
