    List of Ingredients


    • 2 cups boneless,skinless chicken breast-cooked and chopped
    • 2 red bell peppers
    • Salt and pepper
    • 1/2 cup onion-chopped
    • 1 med. zucchini-chopped
    • 3/4 cup part skim milk mozzarella cheese-shredded
    • 4 Tbsp parmesan cheese-grated
    • 2 Tbsp boursin light cream cheese
    • 3 cloves garlic
    • All purpose herb seasoning


    Instructions


    1. Saute garlic,onion and zucchini.
    2. Prepare peppers for stuffing. Combine all other ingredients(except the parmesan)and the sauteed veggies in food processor and process till smooth. Add dash of half and half if needed to thin a little. Fill pepper shells then bake at 350F for 30 min. Top with parmesan and bake at 400F an additional 10 min. Remove and let set 10 min. before serving.
