Raspberry Chicken Breast with Fresh Herb

- 4 boneless,skinless chicken breasts
- 4 Tbsp raspberry vinegar
- 1 Tbsp extra-virgin olive oil
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 1 Tbsp chopped fresh parsley
- 1 Tbsp chopped fresh chives
- 1 tsp chopped fresh thyme
- 1 tsp chopped fresh tarragon
- 4 large garlic cloves,peeled and halved
Instructions
- Combine the raspberry vinegar,salt,pepper,olive oil, parsley,chives,thyme,tarragon and garlic in a small bowl. Then drizzle this mixture evenly over the 4 chicken breasts. Place the chicken on an unheated rack in a broiler pan,broil 4-5 in. from the heat for about 20 min. or until lightly browned. Turn the chicken and brown for an additional 5-15 min. until the chicken is tender and no longer pink.
