    2 tablespoons olive oil
    1/4 cup chopped fresh italian parsley
    1 large egg
    3 tablespoons of ketchup
    3 garlic cloves minced
    1 teaspoon salt
    1/4 tsp. pepper
    1/3 cup grated pecorina Romano (I left this out)
    1/4 cup dried bread crumbs (I substituted plain couscous)
    1 pound turkey
    2 zucchini, ends removed, halved lengthwise and crosswise
    1 short red and yellow bell peppers, halved and seeded
    1 1/2 cup marinara sauce (I used Bruschetta)

    Recipe



    Preheat to 400 degrees. lightly drizzle the olive oil into a 13 by 9 baking dish. Whisk the onion, parsley, egg, ketchup, garlic, salt and pepper in a large bowl. Stir in couscous. Mix in turkey. Refrigerate.

    Using a melon baller or spoon, carefully scrape out the seed oand inner flesh of zucchini, leaving 1/8 inch. Fill zucchini and peppers with mixture. Arrange in dish and top with bruschetta or marinara sauce.
    Bake uncovered until veggies are tender and filling is 165 degrees, about 45 min.
