    SARAH'S SPECIAL CHICKEN ENCHILADAS

    List of Ingredients


    • 4 boneless, skinless chicken breast
    • 1 bottle of enchilada sauce, divided
    • 1 8oz. can of diced green chilies
    • 1cup of shredded mozzarella cheese
    • 1 cup of shredded cheddar cheese
    • 8 flour tortillas 8" in diameter
    • Guacamole sauce
    • Sour Cream
    • Shredded lettuce
    • Additional cheese if desired


    Instructions


    1. Cook the chicken breast in boiling water until tender. Drain and shred.
    2. In a bowl, combine the chicken, 1 cup of the enchilada sauce, green chilies, and the cheese's.
    3. Fill the tortilla's with about 1 TBL. of the filling mixture.
    4. Roll up and place in a 9x13" baking dish. Pour the remaning enchilada sauce over the shells.
    5. Bake uncovered at 350 for 20 minutes.
    6. Serve with the guacamole sauce, sour cream, shredded lettuce, and the additional cheese's, if desired.
