2 1/2 cups Bing cherries, pitted
1/3 cup sugar
2 tablespoons Burgundy wine
1 tablespoon port
1 lemon slice
Dash of cinnamonRecipe
1. In a saucepan, mix the cherries, sugar and 1/2 cup water. Simmer for 5 minutes covered and 5 minutes uncovered. Remove from the heat and let cool.
2. Using a slotted spoon, transfer the cherries to a bowl. Bring the syrup to a boil and reduce by two-thirds. You should have about 1/4 cup syrup. Add the Burgundy, port, lemon and cinnamon. Reduce this liquid by a quarter. Add the cherries to reheat, then spoon over vanilla ice cream. Serves 4.
