Chocolate Zabaglione

1/3 cup sugar
1/4 cup rum ( see note )
4 egg yolks
1 ounce semisweet chocolate, finely gratedRecipe
To Serve:Ladyfingers ( recipe follows )
Combine sugar, rum and egg yolks in a medium-size bowl. Set over a pan of gently simmering water and whisk until thick and mousse-like, 5 to 7 minutes. Fold in grated semisweet chocolate.
Pour into 4 glasses ( parfait glasses look especially nice ) and serve immediately with Ladyfingers. Makes 4 servings.
Ladyfingers:
Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. In a large bowl set over a pan of hot water, whisk 3 tablespoons sugar and 1 egg until thick and mousse-like. Carefully fold in 1/4 cup sifted all-purpose flour.
Using a pastry bag fitted with a 1/2-inch plain nozzle, pipe finger lengths of mixture onto prepared baking sheet. Bake in preheated oven 6 to 8 minutes, or until golden. Cool on a wire rack.
Note: This is a variation of the classic Italian marsala-flavored dessert. Rum has been substituted for the marsala. White or dark rum is fine but if you want an added kick to this recipe, you might want to use spiced rum. It must be served immediately, while still warm.
