    Lemon Cloud Pie

    List of Ingredients





    a great dessert for a special spring dinner.

    1 cup sugar
    3 tablespoons cornstarch
    1 cup water
    1/3 cup lemon juice
    2 large egg yolks
    4 ounces cream cheese
    1-2 tablespoon grated lemon peel
    cup whipping cream
    Topping
    1/2 cup whipping cream
    sugar and vanilla to taste
    9" baked pie shell

    Recipe




    Mix sugar and cornstarch in a heavy saucepan. stir in lemon juice, water and
    yolks. Cook over medium heat until it thickens and boils, stirring constantly.
    Boil one minute. Ann cream cheese and lemon rind. Stir until the cheese is
    melted and incorporated into the mixture. Cool to room temperature. Beat half
    of the whipping cream until it forms soft peaks. Fold into the cooled custard
    and spoon into the pie shell. Chill until serving time. Before serving whip
    the remaining cream and flavor with the sugar and vanilla. Spoon or pipe over
    the top of the pie and serve
