    3/4 c fresh or frozen cranberries
    1/2 c sugar; (divided use)
    2 c flour
    1/2 ts ground cinnamon
    1/4 ts ground nutmeg
    1 tb baking powder
    1/2 ts salt
    1 c milk
    3 tb butter
    2 ts grated orange zest

    Recipe




    Preheat oven to 400 F. Coarsely chop craberries; place in small bowl. Add 1/3 cup of the sugar to cranberries. Set aside.

    In a large bowl stir together flour, spices, remaining sugar, bak ing powder and salt.

    In a medium bowl beat egg with milk, melted butter and orange zest. Add egg mixture to flour mixture, stirring only until flour is moistened, stirring in cranberry mixture with the last few strokes. Spoon batter into greased 2 1/2-inch muffin tins.

    Bake until well browned, about 25 to 30 minutes. Serve warm.

    Makes 1 dozen muffins.
