    Zabaglione with Fresh Red Berries

    Zabaglione with Fresh Red Berries
    6 egg yolks
    1/3 cup granulated sugar
    3/4 cup Marsala
    1/2 cup whipped cream
    Powdered sugar
    Strawberries or raspberries, or a mix of berries
    Fresh mint leaves

    Recipe




    In top of double boiler, combine egg yolks and sugar. Whisk or beat them with hand mixer until they turn pale yellow.

    Add Marsala in slow, steady stream, beating constantly. Place top of double boiler over simmering water that does not touch bottom of upper pan. Continue whisking or beating until mixture is frothy, has doubled in volume, coats back of spoon and has reached 160 degrees.

    Remove from heat and allow zabaglione to cool to room temperature. When cool, fold in whipped cream, cover and refrigerate for up to 8 hours. Place berries in dessert glasses and sprinkle berries with powdered sugar. Top berries with a generous spoon of sauce. Garnish each serving with fresh mint.
    Makes 6 to 8 servings.
