Crab Puffs

3/4 cup water
1/3 cup butter
1/4 tsp. Cajun seasoning
1/4 tsp. salt
3/4 cup flour
3 eggs
1 cup flaked cooked crabmeat
1/4 cup sliced green onion
1/4 cup grated Parmesan cheese
1. Preheat oven to 400�F.
2. Combine water, butter, Cajun seasoning and salt in a medium
saucepan. Bring to a boil. Add flour all at once, stirring until
smooth. Cook and stir until mixture forms a ball. Remove from heat. Cool 10 minutes.
3. Add the eggs, one at a time, beating well with a wooden spoon after
each addition until smooth. Stir in crabmeat, green onion and 2
tablespoons of the Parmesan cheese.
4. Drop dough by small spoonfuls onto greased baking sheets. Sprinkle
with remaining Parmesan cheese. Bake 18 to 20 minutes or until golden
brown. Serve warm.
