    New Mexico Homemade Chili

    List of Ingredients


    1/2 pound pinto beans
    1 pound green peppers, diced
    1 1/2 Tbs oil
    2 1/2 pounds beef chuck cut in small bite sized chunks
    1 pound pork cut in small bite sized chunks
    1/3 cup New Mexico chile powder
    1 1/2 tsp pepper
    2 cloves of garlic, crushed
    1/2 cup chopped parsley
    5 cup canned tomatoes
    1/2 cup butter
    1 1/2 pounds chopped onion
    2 Tbs salt
    1 1/2 tsp cumin

    Recipe

    Soak beans overnight. Simmer beans until tender. Drain water. Add tomatoes and simmer 5 minutes. Saute green peppers in oil 5 minutes. Add onion and cook until tender. Add garlic and parsley. Melt butter, saute meat 15 minutes. Add meat to onion mixture. Stir in chile and cook 10 minutes. Add this to beans and spices. Simmer covered for one hour. Cook uncovered 30 minutes. Skim fat.

    Serves 8-10 people.
