    Couscous Salad

    List of Ingredients




    2 2/3 cup couscous
    2 cups boiling water
    1/2 cup chopped, seeded cucumber
    1/2 cup chopped red bell pepper
    1/4 cup sliced pitted black olives
    1/4 cup diced green onions (scallions)
    2 garlic cloves, pressed or minced
    1/2 cup chopped tomato
    1/4 cup slivered almonds
    1/4 cup currants or raisins
    2 Tbs chopped fresh parsley
    1/4 cup Extra Virgin olive oil
    2 Tbs fresh lemon juice
    2 Tbs fresh lime juice
    Salt and pepper
    Shredded lettuce

    Recipe



    Place couscous in a large bowl.
    Pour boiling water over couscous, and stir briefly.
    Let stand until couscous is soft, and water is absorbed, about 10 minutes.
    Fluff gently with fork.
    Add cucumber, bell pepper, olives, onion, garlic, tomato, almonds, currants, and parsley, and toss gently.
    Mix in oil and juices, and toss gently but thoroughly.
    Season to taste with salt and pepper.
    Serve salad on bed of lettuce.
