    Green Spaghetti

    List of Ingredients




    8 oz uncooked spaghetti
    1 cup fresh basil leaves
    1/4 cup cooked spinach (to help intensify the green color of the pesto and smooth out the basil) fl
    3/4 cup olive oil
    2 Tbs minced garlic
    1 Tbs salt
    1 Tbs black ground pepper
    chopped tomato for garnish, optional

    Recipe



    Cook the pasta according to package directions.

    Meanwhile, in a blender or food processor, put the basil and spinach in and blend it until it appears coarsely chopped. This will take about 20 to 30 seconds in the blender and probably 10 seconds in the processor. Next, drizzle in some olive oil, about a Tbs at a time and blend again. Keep drizzling olive oil and blending until you end up with a smooth mixture. There shouldn't be any chunks of spinach or basil floating around in there.

    Drain pasta, place in serving dish.Add the salt, pepper and garlic to the pesto and blend for a few more seconds. Pour the pesto over the spaghetti and toss it well. Top with tomato.
