    Thai Noodle Salad

    List of Ingredients

    1 lb thin spaghetti, cooked
    1 cup shredded carrots
    1 cucumber, peeled, halved lengthwise, seeded & sliced thin
    1/3 cup chopped scallions
    1 red or green bell pepper, julienned

    Thai salad dressing:
    1/4 cup peanut butter
    1 1/2 TBL vegetable or peanut oil
    2 TBL soy sauce
    2 cloves garlic, minced
    1 tsp sugar
    1 tsp grated fresh gingerroot
    2 TBL sherry (optional)
    1 tsp dark Asian sesame oil
    2 TBL lemon juice
    1 green onion, sliced
    1/2 tsp chili powder
    1/4 cup vegetable broth
    1/3 cup chopped roasted peanuts, for garnish

    Recipe

    Combine the pasta with the vegetables in a large bowl, toss.
    Place all the dressing ingredients in a processor or blender & blend until smooth.
    Add the dressing to the pasta & toss. Sprinkle with chopped peanuts.
