    Mediterranean Tuna Salad

    1/4 pound fresh green beans
    1 (12-ounce) can tuna, drained, separated into chunks
    2 tablespoons capers (optional)
    1 (15-ounce) can Great Northern beans, rinsed and drained
    1 large tomato, chopped
    12 ripe Greek olives
    Snipped fresh chives (optional)
    Bottled Italian Dressing
    Lettuce for serving

    1. Cook beans in slightly salted boiling water 5 minutes or until
    crisp
    tender; drain. Rinse with cold water; drain again.
    2. Place tuna in center of serving platter; sprinkle with capers, if
    desired.
    3. Arrange Great Northern beans, tomatoes and olives around tuna;
    surround
    with green beans. Sprinkle with chives, if desired. Serve with
    dressing.

    Makes 4 servings
