Terrific Tomato-Basil Salad
List of Ingredients
5 cups chopped plum tomatoes
1 cup chopped fresh basil
3/4 cup minced red onion
8 cloves garlic - minced
2 tsp dried parsley
1 tsp black pepper
2 tsp salt
2 TBP olive oil

mix all together, cover and place in 'fridge for at least 8 hours (best if left overnight)
the salt will pull the liquid out of the tomatoes and create a flavorful "broth" prefect for dunking bread in

Other uses
if you chop everything very finely you can use this to make bruchetta:
simply slice italian bread into 1/2" slices brush with good olive oil and bake at 400 degrees until crispy and golden
arrange slices of bread on a platter and smother with tomato mixture
this finely chopped tomato mixture can also be used as a "relish" on top of freshly grilled fish or poultry
