    Budapest Beef Goulash

    List of Ingredients




    2 Tbs oil
    2 large onions, chopped
    1 small tomato, chopped
    1 small green pepper, chopped
    1 Tbs sweet paprika
    2 lbs chuck beef, cubed
    1 tsp tomato paste
    1 tsp salt
    1 cup boiling water
    2 large raw potatoes, diced

    Recipe



    In a heavy 2 1/2 qt saucepan, heat the oil, add the onions, cook until golden brown. Add the tomato, green pepper, paprika, beef, tomato paste and salt. Cook, stirring over medium heat until the beef is no longer pink. Add the water, cover and simmer 1 1/2 hours. Remove the meat, strain the gravy & return to the pan with the meat. Add the potatoes & simmer until tender, about 1 hour.

    Serves 4-6
