    Hot and Cold Pesto Chicken Sandwich

    I came up with this one when I realized these were the only ingredients I had in the fridge. Mmm Mmm!! TIP: Each sandwich will need one small chk. breast so use as many as you need.


    List of Ingredients


    • 2 boneless skinless chicken breasts
    • Cooking spray
    • 2 peices low-fat swiss cheese (or any favorite white chesse)
    • 4 tbsp. pesto
    • 4 slices tomato
    • 4 button mushrooms sliced
    • 1/2 cup chopped red onion
    • 4 slices San Luis Sourdough Bread


    Instructions


    1. Heat a pan sprayed with cooking spray over med heat. Add chicken breast and cook till no longer pink.
    2. While breast are cooking spread 2 tbsp.s of pesto on each sandwich. Place two tomato slices on same half with pesto. Place your cheese on other side of your bread.
    3. When Chicken is ready cut in half and place on your cheese covered bread.
    4. Spray your same pan with more cooking spray and throw in the mushrooms and onions. Saute until browned. 4 to 5 minutes.
    5. Toss mushroom and onion mixture on top of chicken and Serve!!!


    Final Comments


    The combination of the cold pesto and tomato and the hot chicken/cheese is a delight on a late summer evening!!
