Hot and Cold Pesto Chicken Sandwich
I came up with this one when I realized these were the only ingredients I had in the fridge. Mmm Mmm!! TIP: Each sandwich will need one small chk. breast so use as many as you need.
List of Ingredients
- 2 boneless skinless chicken breasts
- Cooking spray
- 2 peices low-fat swiss cheese (or any favorite white chesse)
- 4 tbsp. pesto
- 4 slices tomato
- 4 button mushrooms sliced
- 1/2 cup chopped red onion
- 4 slices San Luis Sourdough Bread
Instructions
- Heat a pan sprayed with cooking spray over med heat. Add chicken breast and cook till no longer pink.
- While breast are cooking spread 2 tbsp.s of pesto on each sandwich. Place two tomato slices on same half with pesto. Place your cheese on other side of your bread.
- When Chicken is ready cut in half and place on your cheese covered bread.
- Spray your same pan with more cooking spray and throw in the mushrooms and onions. Saute until browned. 4 to 5 minutes.
- Toss mushroom and onion mixture on top of chicken and Serve!!!
Final Comments
The combination of the cold pesto and tomato and the hot chicken/cheese is a delight on a late summer evening!!
