    Zucchini Bread (cake)

    I've made this for a lot of years. It's best if you julienne the zucchini in thin pieces. This is a very good and moist bread/cake. Another one from Diane. Thanks Diane!!!
    3 eggs
    1/2tsp. baking soda
    1 C. oil
    1/2 tsp. salt
    2 C. grated zucchini
    2 1/3 tsp. cinnamon
    2 C. sugar
    3 tsp. vanilla
    3 C. flour
    1/2 tsp. baking powder
    1/2 C. chopped nuts (opt. I don't use them)

    Mix well the eggs, oil and sugar. Add flour, soda, salt, cinnamon, vanilla, and baking powder. Then mix well. Next stir in the zucchini and nuts. Bake at 350� for 50 min. to 1 hour in greased bundt pan or 2 greased bread pans.
