    Cheesey Potatoes

    I am not sure where I found this recipe, but it is alway a big hit. My aunt thinks it is better than all the others she has tried because it starts with home cooked potatoes.


    List of Ingredients


    • 6 baking potatoes
    • 1 16 ounce container of sour cream
    • 1/2 cup butter
    • 1 onion, chopped
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 2 - 3 cups of shredded cheddar cheese


    Instructions


    1. Bake or boil the potatoes with the skins on. Cool slightly, peel and slice or cube.
    2. Melt the butter in a skillet and saute onion till tender.
    3. Toss together the potatoes, cheese, salt and pepper. Stir in the sour cream. Mix in the butter and onion.
    4. Place in a casserole dish that has been sprayed with cooking spray. Bake at 350 degrees for about 30 minutes or until browned and bubbly.


    Final Comments


    I usually bake the potatoes. This can be assembled ahead of time and refrigerated. Allow extra baking time if refrigerated.
