    Marinated Vegetables (Italian Style)

    List of Ingredients


    • 9 Cups Assorted Vegetables (fresh)
    • 3 cloves garlic , minced
    • 1/2 C. Corn Oil
    • 1/2 C. Cider Vinegar
    • 1/2 C. water
    • 1 tsp. Salt
    • 1/2 tsp. black pepper
    • 1 tsp. Oregano or Italian seasoning
    • 1 C. pitted black olives


    Instructions


    1. In large skillet combine all ingredients, except olives. Bring to a boil. Reduce heat, cover, simmer 5 minutes or until vegetables are tender-crisp. cool, add olives. Transfer to bowl or storage container. Cover, chill 6 hrs. or more.

    The longer you let them sit the more flavor there is to it.
