    Ok we know how to convert yield now [and if you don't go read that under total yield ie how to go from 1 1/2 gallons of soup to 3/4 gallon]

    Portions

    first determine total yield by this formula

    Original portions x original portion size = total yield

    ie back to the soup
    that 1 1/2 gallon recipe produced 48 servings of 4 oz each.
    so: 48 x 4 = 192 oz

    Step 2 determine total yield desired by multiplying new number of portions times new portion size.

    You now want that soup to give you 72 servings at 6 oz each

    so: 72 x 6 = 432 oz

    step 3 obtain this conversion factor by:
    total new yield/total old yield = conversion factor

    432/192 = 2.25

    THEN


    Recipe



    you multiply each ingredient quantity by the conversion factor:

    Old quantity x conversion factor = new quantity

    back to the cauliflowers

    5 lbs cauliflower 5 x 2.25 = 11.25 lbs
    4 celery stocks 4 x 2.25 = 9
    1 onion 1 x 2.25 = 2 1/4
    2 qt chicken stock
    3 pints heavy cream

    you finish the rest.
