    Recipe Conversions: Total Yield

    Oh crap 4 more are coming for supper and you only have a recipe for 6. NOW what? Conversion or how to make that recipe for 10.


    It actually is very simple. Keep measurements the same. Ie if you are working with pounds keep it pounds. If it is 6 half cup servings yeild then keep it half cup servings.

    Now to convert First:
    Divide the new yield by the old yield to get the conversion factor.

    new yield / old yield = factor

    for example
    you can make 1 1/2 gallons of soup with your recipe. You only want to make 3/4 gallons [hey it's not quite an army you have to feed here]

    so

    .75 [3/4] gallons / 1.5 gallons = .50 conversion factor
    [make it simple drop that 0 so it becomes .5 in this case]

    Part 2 go to the recipe and
    take the old amount of ingredients and multiply it times the conversion factor

    ie

    Recipe



    5 lbs of cauliflower chopped
    4 celery stocks
    1 onion
    2 qts chicken stock
    3 pts heavy cream
    are your ingredients for the 1 1/2 gallon soup

    to convert them to the 3/4 gallon soup:
    Cauliflower 5 lbs x .5 = 2 1/2 lbs
    celery 4 x .5 = 2
    onion 1 x .5 = 1/2

    you finish the rest.
