    Italian Pickled Veggies

    List of Ingredients




    "I also pickle cauliflower, sliced green bell peppers and cubed eggplant with this recipe."-- Esther Leucci

    1 to 2 lbs. mushrooms
    white vinegar
    1/2 tsp. salt
    extra virgin olive oil
    12 garlic cloves, diced
    2 tsp. red pepper flakes
    2 tsp. capers




    Recipe



    Mushrooms: Select button mushrooms. If unavailable, slice medium-sized mushrooms in half.

    Wash mushrooms, place in a deep fry pan, cover with vinegar and bring to a boil. Drain in colander, cool. Toss mushrooms with garlic, red pepper, capers and salt. Pack
    into a glass jar, then fill with olive oil. Use a long knife to gently release air pockets. Refrigerate.
