Shrimp Fettuccine

List of Ingredients
- 5 green onions, chopped
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 1 stick butter
- 2 Tablespoons oil
- 3 pounds raw shrimp, peeled
- 2 teaspoons salt
- 8 ounces fettuccine pasta
- 3/4 cup grated Romano cheese
- 3/4 cup grated Parmesan cheese
- 1 cup heavy cream or half & half
- 4 Tablespoons parsley, chopped
Instructions
- Over medium heat, saute onion, mushrooms and garlic in 1/2 stick butter and 2 tbsp. oil. After mushrooms are tender, add shrimp. Saute until pink. Season with salt. Cover and keep warm.
- Cook pasta in salted, boiling water until done; drain well.
- Place remaining butter in pan and add pasta, cheeses and cream. Mix well. Combine with shrimp mixture.
- Sprinkle chopped parsley over top.
