Lemon Squares
I remember that I got this recipe from a cookbook that was published by Williamson Publishing of Vermont, but cannot for the life of me remember its title or author. Such is the curse of someone who was in the retail book business for FAR too long (23 years). But I always look on the bright side: I have hundreds of cookbooks--most of which didn't cost me a cent--to show for my efforts. Life is good...
Pastry:
1 cup all-purpose flour
1/2 cup (1 stick) butter or margarine
1/3 cup confectioners' sugar
Topping:
2 eggs
1 cup granulated sugar
1/2 Tbsp. all-purpose flour (1-1/2 tsp.)
3 Tbsp. lemon juice concentrate
Preheat oven to 350� F. In a medium bowl, mix the pastry ingredients together. Press into a greased pan (I usually use a 9-inch square pan). Bake for 20 minutes.
Combine all topping ingredients together and beat until well blended. Pour over baked pastry. Return to oven and bake an additional 20 to 25 minutes.
Cool pan on wire rack before cutting. Sprinkle with additional confectioners' sugar. Freezes well, but tastes fresher and lighter when freshly baked.
